I will try this! Can I have a hint on how to transfer the files from the dump to the /system/app folder of the phone and how to know the right permission to set? For the Gobstopper 2.3.6 I think I'll wait since ICS will be availabale in about 6 months (in 10 years for the Bell version...) and I don't want to get any trouble updating

    Thanks

Would Root Manager be a good choice to put back the apps in the /system/app folder?

If you're talking about Root Explorer, the paid app from the market, yes, it's an excellent tool.

Sorry I wasn't around for your earlier questions. It's great to hear that it worked out, though! Awesome job!

You have to be able to boot into the phone and you have to be rooted.

Figure out all of the apk/odex files you need to repair/replace and get them copied over from the zip on your pc to your Internal Storage or SD Card in your phone. Then use a root file manager like Root Explorer, set the system as r/w within the app, then copy/paste all of the apk/odex files into /system/app/ , set their permissions correctly (see pic below), set the system as r/o again and reboot.
