I have a corp sync email account and a 'regular' IMAP email account setup on my phone (I also have a gmail account setup as well, but that's not really material).
When I hit the 'email' application, it shows me ONE of the mail accounts (whichever one is set as "Default email account" in email settings). However, I know both are working in the background because I get notifications of emails in both accounts.
So, how do I switch between email accounts (preferably w/o having to change my default email account in settings)? For example, I want to initiate an email on my corp sync account when my IMAP account is set as the default. How would I go about that?

I'm not able to switch as you describe. Let me be more clear in case we are talking about different apps / etc.
I go to home | O menu | email
At the very top of the screen is the phone nav bar [AT&T, notification icons, BT, WiFi, silent indicator, H+ indicator, signal strength, battery level, time].
The top email application bar has a refresh icon (two arrows in a circle), the name of my default email account: inbox (# messages), and a green plus. Something like this (please excuse the crude ASCII graphics):

If I read your message correctly, you want me to click on the provider name ("atrixforums.com: inbox (8)" in my example above). When I do that, I get a list of the available folders within that particular account (inbox, trash, outbox, sent items, drafts, etc.). Long clicking on this same place does nothing different.
Obviously I'm missing something.

P.S. I've found sort of a workaround for the original problem (not being able to switch email providers). If you open the "messaging" application instead of the "email" application (Home | O menu | messaging) you can see all of your email providers / accounts. If you click on one of them, you can go to that inbox. To get to a different one you have to 'return' out of the main inbox view for that provider and go back to the 'messaging' application.

Yeah, we were talking two different animals. Once I went in and added something other than Yahoo/Gmail, I saw the same behavior you were seeing.

If you go to the "Messaging" app (one with a plain white closed envelope) which I initially thought was only for text messages, that app has all your accounts in one place, including:
Universal Inbox
Text Messaging
Gmail
Yahoo! Mail
Corporate email
and more from social networks like Facebook and LinkedIn.
